Great British Bake Off champion Nancy Birtwhistle is dreaming up a new recipe each day ahead of book launch

Star Barton baker and queen of The Great British Bake Off, Nancy Birtwhistle, is currently compiling a book of fantastic easy-to-follow recipes.

The 60-year-old consistently impressed show judges Paul Hollywood and Mary Berry, together with millions of viewers, on the hit TV programme and now she is working on her "encyclopedia of baking".

She said: "I see my book as being a hand-me-down book, that teaches everything from the basics up to the top end.

"It has been said to me that the book deal tends to go to the winner each year.

"You need about 130 original recipes for a book, so I have been trying to come up with a recipe a day."

The final, whose audience figures eclipsed that of the World Cup, was filmed in June and all the contestants were under strict instructions from BBC bosses not to spill the beans.

She added: "After the show, I took stock. I needed to. I was approached by a lot of magazines asking if I would like to write magazine columns.

"Now the dust has settled, I am trying to say 'yes' to everything. I have never been in this position before, so I think I need to try everything until I find something I like."

This is similar to advice she gives budding bakers.

"You don't always get it right first time," she said. "Sometimes you have to experience it before you get it right."

Nancy was reunited with the show's judges Mary Berry and Paul Hollywood at last Sunday's BBC Good Food Bake & Cake Show in London.

She said: "I was getting mobbed and an official came over and took me to a side room where Paul and Nancy were.

"It was lovely to see them again. They asked how I was getting on."

Many viewers saw Nancy as one of the show's most composed contestants, but she reveals the reality of the competition is quite different.

She said: "It was incredibly stressful. People often say, 'Oh but you always looked so calm'.

"Most definitely, though, it was no walk in the park. You were working in a tent in summer. Humid conditions and chocolate work definitely do not go well together."

The book will not arrive in time for this year's festive season but pop on your Christmas 2015 list.
